Our turkey legs are brined, then smoked for 8 hours with 100% hickory wood, then cooked sous-vide so they are fall-off-the-bone tender and run-down-your-wrist juicy. All you do is brown them off in a hot hot oven – or, for a real treat, try flash-frying them.
